This is a very short-run coffee with an extremely rare coffee cupping score of 90 ('Outstanding Speciality')!!
Though all our coffee is classified 'speciality' as each has an 80+ score, anything in the 90 to 100 range is something quite exceptional. Felipe Arcila comes in at a 90 which is epic and we're lucky to get our hands on it to offer it to you!

This coffee was grown by Felipe Arcila at the farm Jardines Del Eden in Colombia. The "EF2" on the label refers to that the coffee has gone through an extended fermentation twice. Once in a dry aerobic fermentation for 24 hours before being placed for 50 hours at a temperature below 22 °C. Then the whole cherries are placed on raised beds till they reach their ideal moisture content.
All these processes of drying and fermentation in coffee production are done changing the amounts of sugars, organic acids and other qualities in the beans which can result in amazing flavours or enhance and refining what is already there. It's an exciting and complex area of coffee processing but requires alot more monitoring and experimentation to get things right which raises production costs and why we often see these coffees at a premium price.
