This coffee comes from our friend John who owns the Green Collection. He always has really exciting coffees on offer. Finca La Estrella is situated in Tolima, in the centre-west of Colombia, in the middle of the FARC controlled conflict zone. Coffee cherries are sealed for 200 hours, which helps the fermentation process and brings out fruity flavours.
