Jericho Coffee Traders is proudly partnering with the charity Project Waterfall to create our new 'Waterfall' washed coffee from Ethiopia! It's the perfect coffee for a filter or a delicate cafetiere.

For each bag sold, we'll donate 10% to Project Waterfall, a charity that creates better conditions for coffee growers worldwide.

Project Waterfall does fantastic work bringing clean water, sanitation and education to coffee-growing communities across the world. And since 2011, it has raised over £1.5 million to change the lives of more than 70,000 people in Nicaragua, Tanzania, Rwanda, Vietnam, Uganda, Kenya and Ethiopia.

The coffee beans are from the Jimma Zone of Western Ethiopia from a dedicated smallholder farmer named Mustefa Abakeno. He manages a 18 hectare farm 2040 meters above sea level. Mustefas blends tradtion and innovation in his coffee processing to create some exceptional coffee beans. Early on Mustefa purchased a Coffee Pulper allowing him to process half his harvest as washed the other as natural. However, due to water scarcity and limited space the coffee experiences a concise eight-hour fermentation period before being skillfully transferred to drying bed. The outcome of this rigorous process resembles a light honey in flavor. 

In 2018, Mustefa embarked on his journey as an exporter, benefiting from regulatory changes that allowed him to engage directly with discerning buyers. To facilitate this endeavor, he established the "Beshasha" wet mill, a versatile facility processing both his coffee and that of local outgrowers. These outgrowers, Mustefa's neighbors, collectively oversee land parcels ranging from 4 to 10 hectares.

Since 2021 Mustefa and agronomist Harun from the Falcon team (one of our green bean suppliers) have been working together with local farmers who supply cherries to the washing station. His efforts have led to numerous improvements at the washing station, including the installation of shade netting to protect drying beds during the hottest hours of the day. Cherry selection at the delivery point, tagging day lots for separation, and vigilant monitoring of moisture levels during drying ensure uniform drying before lot assembly.

These improvements, dedication to innovation, quality, and community support has all helped produce the high-quality beans in this Waterfall coffee.
