With a Partridge and a Lychee you can expect a whole load of tasting notes - lychee, candied berries, raisin, and sweet wine - even the aroma of the coffee beans fills the room! It tastes amazing with all brewing methods but it is particularly well suited as a filter coffee.
The beans are grown by Jairo Arcila, a third-generation coffee grower from Quindío, Colombia, with over 40 years of experience. Jairo's genius stroke was to co-ferment the beans with lychee and wine yeast. It is this process that pulls out the truly remarkable flavour of the Castillo variety bean.
Jairo Arcila's first farm, Finca La Esmeralda, was founded in 1987 and he has expanded over the years to a total of six farms. His estates now grow exotic varieties like Pink Bourbon, Java, Papayo, and Gesha, all under the guidance of his sons, Carlos and Felipe, the co-founders of Cofinet.
Grounded in tradition yet always innovating with advanced fermentation methods, Jairo also cultivates mandarin, orange, plantain, and banana on his land - supporting both flavour diversity and community vitality.
