Spotlight on Yesid Vargas

Yesid Vargas is a magnificent "Grand Cru", natural coffee from Colombia. It delivers a very sweet and vibrant flavour profile with a pleasant creamy mouthfeel.

Yesid Vargas is a Colombian coffee producer renowned for his dedication to cultivating very high-quality beans. His journey into the world of coffee began after he was gifted a lot from his grandfather when he was 17 years old. The purpose of this gift was to provide him with economic assistance to enter the National Army and serve his country.

However, at the age of 27, his life took an unexpected turn when he was the victim of an anti-personnel landmine. As a result of this tragic event, he went from being an active member of the armed forces to retiring due to disability.

Despite his difficulties, Yesid returned to one of his childhood passions: living in the countryside. Since then the El Ventilador farm has become his greatest passion. The farm's Spanish name translates as "The Fan" to reflect the area's characteristic windy conditions! The 11 hectares of farm is located in the village of El Higuerón at an altitude of approximately 1,630 metres above sea level. 

Yesid Vargas is a Pink Bourbon variety coffee - a rare and prized bean known for its acidity and sweetness, with notes of citrus, florals, and honey. The cherry was named for its striking pink hue and the belief that it was a natural mutation of Red and Yellow Bourbon. Now, due to genetic analysis, it is thought to have come from an Ethiopian landrace variety.

The beans undergo a Camionetta Anoxic Natural process, where ripe cherries from El Ventilador farm are picked and placed in food-grade GrainPro bags, fermenting in an oxygen-deprived environment during the 3-day journey to the processing station. 

The cherries are washed, cooled, and floated upon arrival to remove underripe cherries. They are then placed in tanks with clean sheeting and water to create an oxygen barrier, fermenting for another 48 hours. The water is refreshed to maintain cool temperatures throughout the process. After fermentation, the cherries are drained and dried naturally on raised beds in a solar dryer for 20 days and then finished in mechanical dryers.

The dedication and effort Yesid and his family invest in cultivating their coffee means they produce beans of outstanding quality - a true Grand Cru coffee!
